Three rules that make everything taste better

1. Bloom your spices. Ground spices wake up in 30 seconds of hot oil before the main ingredients go in — this one habit doubles flavor.

2. Dried herbs early, fresh herbs late. Dried oregano and thyme need simmer time to open up; add them with the liquid, not at the end.

3. Whole beats ground for shelf life. Whole spices (peppercorns, cumin seed, allspice berries) hold flavor 3–4 years; ground versions fade in about half that. Buy whole in bulk, grind as you go.

How much to use

Rule of thumb: 1 teaspoon of dried seasoning per pound of protein, then adjust up. You can always add — you can't take away.
