The Master Roasting Chart
All times assume a single layer on a rimmed baking sheet in a preheated oven, stirred once halfway. Nuts are done when fragrant and one shade darker — they keep cooking as they cool.

Oil or no oil?
Dry roasting works for every nut above and keeps flavors pure. For salted nuts, toss with 1 teaspoon of neutral oil per 2 cups of nuts before roasting so the salt sticks, then salt immediately after they come out of the oven.
Stovetop & air fryer shortcuts
Skillet: medium heat, dry pan, 3–5 minutes with constant stirring — best for small batches of slivered almonds, sesame seeds, or pine nuts.
Air fryer: 300°F for 5–7 minutes, shaking the basket twice. Great for half-cup batches.
Storage after roasting
